Potato bacon and cheese bombs
2 pounds mashed potatoes (about 4 cups)
1 teaspoon nutmeg
Salt & pepper
3 1/2 ounces smoked bacon
1 cup shredded mozzarella cheese
1 egg, beaten
Oil for frying
In a bowl, mix the mashed potatoes with 2 eggs, the chopped parsley, nutmeg, salt and pepper.
Cut the smoked bacon into small pieces and sauté in a pan until golden brown.
Form small balls with the mashed potatoes, and fill them with mozzarella and a piece of bacon.
Dip potato balls in flour, then beaten egg, and finally breadcrumbs.
Fry in oil until golden brown.
